8 Ways to Sneak Some Extra Veggies Into Your Day

Veggies. You know you're supposed to eat them, but that doesn't always make them fun. Yeah, you could sit down and munch on a salad every day, but that's not the only way. Here are eight ideas to help you get a little more veg into your day without breaking your stride.

Make Some Soup: Soup is comforting, nutritious, and the perfect way to load up on vegetables. Try adding more vegetables to an old favorite recipe, like chicken noodle or minestrone. Or explore the world of pureed vegetable soups. Try cauliflower, butternut squash, carrot, or pumpkin soup. The possibilities are limited only by your imagination (and the strength of your blender).

Add a Kebab: Veggie kebabs make for a simple (and tasty) side to grilled meals. Just stick a few pieces of pepper, onion, mushroom, and tomato on a skewer, grill alongside your main course, and enjoy.

Stir in a Greens Powder: Greens powders give you an extra boost of raw vegetable nutrition. Plus you'll find extra probiotics and digestive enzymes in many powders. This helps improve your digestion while you work towards your daily veggie goals.

Try Veggie Noodles: Swap out refined pastas for vegetable noodles. A spiralizer makes it simple to make spaghetti-like strands of carrot, zucchini, and squash. Thinly sliced zucchinis are a great substitute for lasagna noodles in a casserole. Or just reach for a spaghetti squash - a natural (and tasty) pasta alternative.

Get Saucy: Making pasta? Chop up some veggies and add them to the sauce. They'll help add bulk and flavor as well as add a little extra veg to your day.

Add Them to Eggs: Start the day right by adding veggies to your breakfast. Eggs, peppers, onions, mushrooms, spinach, and tomatoes work in perfect harmony to make a delicious and vegetable-heavy way to start your morning.

Join a CSA: If you want to eat more vegetables, you have to start by keeping vegetables in your house. Joining a CSA (community supported agriculture) program means you'll get a box of vegetables every month. It's a great way to guarantee access to a wide variety of foods while helping support local farmers. Win-win.

Double Up: Chances are you already have some go-to recipes that contain vegetables. Make them work a little harder by increasing their veggie quantity. Love pizza? Add some extra peppers, tomatoes, or onions. Like steak and potatoes? Add some roasted brussels sprouts on the side. Are you a soup aficionado? Add a couple extra handfuls of chopped veg. A little bit extra can go a long way, so don't be afraid to add a little more.
